Dave gets behind the counter of a Birmingham fried-chicken shop and surprises Jodie with a ticket to New Orleans, home of southern fried chicken.

Jodie thinks soul food is the best ever, and she is really excited to be off to New Orleans, a city that's still recovering from the impact of Hurricane Katrina.

04:21 – 06:41

Soul food chef Nora Dejoie tours the world teaching people about her cooking, and she gives Jodie a warm welcome. Her first job is to find some authentic chicken, but Jodie's purchase from a fast food chain doesn't meet Nora's exacting standards.

Jodie asks everyone she meets where to buy the best chicken, and she comes back with a batch that Nora reckons is 'almost authentic'.

08:21 – 09:15

Jodie's staying at Oak Alley Plantation, an ex-slave plantation. It's a beautiful place, but its sad history gives Jodie a strange feeling.

Nora makes southern fried chicken from a recipe invented by the godfather of the dish, chef Austin Lesley.

It's day two, and Jodie's expecting Joe Dobie and Mr T to show her some cute chickens at their farm… but the first job is to slit those chickens' throats. Mind the wiggling legs!

Squeamish Jodie's really put to the test as she sees the chickens being plucked and then gets her own hands dirty in Mr T's gutting lesson.

15:15 – 17:36

It's back to New Orleans for a big meal with Nora's friends, then out on to the street to warm up for tomorrow's Mardi Gras. Jodie's very taken with the air of optimism she's found in Louisiana.

The next day, Jodie's serenaded by a street singer: 'That chicken is spicy…' There's an air of Mardi Gras anticipation.

18:27 – 22:06

Jodie gets 20 minutes to cook an authentic southern fried chicken for Jacques Imo, who learned his craft from Austin Lesley. She forgets a vital ingredient, so Jacques offers her a second chance.

22:07 – 23:25

Under Jacques' careful guidance, Jodie creates a fantastic meal. Then it's off to the party. Jodie's learned so much, and had a brilliant time. She can't wait to do some more travelling.

23:26 – 24:11

Jodie recreates her chicken dish for Dave. Mmm…it's tasty!
