Dave surprises the girls as they wait for their supper in the heart of Norwich, and gives them a ticket to Icelandic port Reykjavik, which supplies British fish and chip lovers with 1 million tons of fish each year.

03:05 – 04:56

The temperature's minus ten degrees Celsius when the girls touch down in Iceland. They're whisked off on skidoos to a frozen lake to meet their mentor Stefan Ulfarsson, fish chef and ex-trawlerman.

04:57 – 07:45

Gingerly, the girls follow Stefan out on to the surface of the frozen lake, where they're going to fish once they've drilled through the ice. The ice cracks alarmingly, and they retreat to a safer spot nearer the shore.

07:46 – 09:46

It takes patience to catch a fish, especially when you're sitting shivering on the ice. After an hour, Katie slips over, the ice cracks again, and the expedition's called to a halt, leaving the girls empty-handed.

09:47 – 12:30

It's day two, and the girls are off to a fish factory to learn how to gut and fillet a cod. Matthias Thorarinsson demonstrates, and then it's the girls' turn.

12:31 – 14:00

Katie and Paisley take it in turns to hack away at a 15lb cod. They produce some passable fillets.

14:01 – 16:22

The girls go to the home of Erna Kaaber, owner of the best fish and chips restaurant in Iceland, for a cooking demonstration. They discover just how delicious Icelandic fish and chips are, and much healthier than the sort they're used to eating back at home.

16:23 – 20:15

The next day the duo are taken out to sea on Einar Bjornsson's trawler, to see for themselves why commercial fishing is the world's most dangerous job. Again and again, they drop the nets, but each time they're hauled in empty, even though surrounding ships are catching cod. Fish stocks are at an all-time low.

20:16 – 20:49

Now it's Katie and Paisley's turn to cook, at Erna's restaurant, where they'll be serving Gugga Logadottir, the best-know fish chef in town.

20:50 – 22:35

As the girls get cooking, they forget lots of the detail they were shown, but they still manage to produce a great fish and chips meal for their judges, and Stefan gives them 8 out of 10.

22:36 – 24:00

Back in Norwich, Dave comes round to put the girls' skills to the test. The chips are great, but as for the fish… Oh dear, looks like they need some more practice.
