Carrot cookies

During the war, Britain had to grow much of its own food. The government produced a range of recipes to make use of home-grown fruit and vegetables. Here’s one to try at home.

You will need...

1 tablespoon of margarine

4 tablespoons of grated raw carrot

3

6 tablespoons of self-raising flour

4

2 tablespoons of sugar and a little extra for sprinkling

Vanilla flavouring

Try this...

Cream the margarine and sugar together. Beat in the flavouring and carrot.

Fold in the flour. Drop spoonfuls of the mixture into small greased patty pans. Sprinkle the tops with sugar.

Ask a grown-up to heat up the oven to a brisk heat (Gas Mark 4, 400°F or 200°C) and put them in for you. Cook for about 20 minutes.
